Chicken Enchiladas: A Mexican Classic

Ingredients:

  • 12 corn tortillas
  • 1 cup shredded cooked chicken
  • 1 cup shredded cheddar cheese
  • 1/2 cup enchilada sauce
  • 1/4 cup sour cream
  • 1/4 cup guacamole
  • 1/4 cup salsa

Instructions:

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Spread 1/2 cup of the enchilada sauce in the bottom of a 9x13 inch baking dish.
  3. Warm the tortillas in a skillet over medium heat until softened.
  4. Spread 1/4 cup of the chicken mixture down the center of each tortilla.
  5. Roll up the tortillas and place them in the prepared baking dish.
  6. Pour the remaining enchilada sauce over the top of the enchiladas.
  7. Sprinkle with the cheddar cheese.
  8. Bake for 20 minutes, or until the cheese is melted and bubbly.
  9. Serve with sour cream, guacamole, and salsa.

Tips:

  • To make the enchiladas ahead of time, assemble them according to the instructions but do not bake them. Cover the baking dish with foil and refrigerate for up to 24 hours. When ready to bake, preheat the oven to 350 degrees F (175 degrees C) and bake the enchiladas for 30 minutes, or until the cheese is melted and bubbly.
  • If you do not have enchilada sauce, you can make your own by combining 1 can (10 ounces) of tomato sauce, 1/2 cup of water, 1 tablespoon of chili powder, 1 teaspoon of cumin, and 1/2 teaspoon of salt. Bring to a simmer and cook for 10 minutes.
  • For a spicier enchilada, add 1/4 teaspoon of cayenne pepper to the enchilada sauce.
  • To make the enchiladas vegetarian, substitute black beans or lentils for the chicken.
  • To make the enchiladas vegan, substitute vegan cheese for the cheddar cheese and use a vegan enchilada sauce.
