Ingredients:

  • 1 pound bacon, chopped
  • 1 onion, chopped
  • 2 cups Arborio rice
  • 4 cups chicken broth
  • 1/2 cup dry white wine
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste

Instructions:

  1. In a large skillet, cook the bacon over medium heat until crisp.
  2. Remove the bacon from the skillet and set aside.
  3. Add the onion to the skillet and cook until softened.
  4. Add the rice to the skillet and stir to coat with the onion and bacon fat.
  5. Add the wine to the skillet and cook until it has evaporated.
  6. Add 1 cup of the broth to the skillet and cook, stirring constantly, until the broth has been absorbed.
  7. Continue adding the broth, 1 cup at a time, stirring constantly, until the rice is cooked through and the risotto is creamy.
  8. Stir in the Parmesan cheese, parsley, salt, and pepper.
  9. Serve immediately.

Tips:

  • To make the risotto ahead of time, cook it according to the instructions but do not add the Parmesan cheese or parsley. Cover the risotto and refrigerate for up to 24 hours. When ready to serve, reheat the risotto over low heat until warmed through. Stir in the Parmesan cheese and parsley and serve immediately.
  • For a richer risotto, use heavy cream instead of chicken broth.
  • For a more flavorful risotto, add a splash of balsamic vinegar to the wine.
  • To make the risotto vegetarian, omit the bacon and use vegetable broth instead of chicken broth.
